Florida Vacation Guide: SHOR American Seafood Grill’s Lobster Ravioli Recipe
SHOR American Seafood Grill is held in high esteem thanks to its creative cuisine and use of fresh, sustainable, organic and/or locally sourced ingredients. One of SHOR’s most popular dishes is the delectable Lobster Ravioli. The recipe is requested by (and given to) many guests.
How it’s made: SHOR American Seafood Grill Lobster Ravioli
A seafood mousse made of shrimp, scallops and lobster, is added to fresh ravioli noodles. The ravioli also has lobster caviar inside. The Chef says scallops and butter are two very important for the dish’s richness.
Why make the ravioli fresh not frozen?
Chef Richard Preston, Executive Chef of SHOR American Seafood Grill in the Hyatt Regency Clearwater Beach, is aware that there are companies that can take the exact ingredients that go into a dish and they can do a great job of duplicating a recipe. But over time what can happen is that shortcuts start being taken until eventually it’s not the same dish anymore.
According to Chef, the main ingredients can’t be replicated – time and love. Freshness is also key!
When the raviolis are put together, you simmer them in water and then serve with fennel and vermouth cream sauce. Mmm!
Top Chef of the Year Tampa Bay
Chef Preston will participate with other prominent area chefs in Top Chef of the Year Tampa Bay 2012 on March 26 at 6pm at the A La Carte Pavilion. Proceeds of this “culinary adventure” and live auction will benefit the Child Abuse Council of Tampa Bay.
